I'm a huge lover of poke bowls! They are just so easy, fresh, healthy and delicious. I could seriously eat them everyday. I've decided to share my favourite recipe for the easiest one you will find around, perfect for camping or picnic lunches or pre-prepared and taken to work to enjoy.
Super Easy Poke Bowl
Ingredients
1 serve Brown Rice
120g Salmon sashimi (or any protein of your choice), diced
1/4 avocado, diced
1/4 cup spinach
1/4 Lebanese cucumber, sliced and cut into half
4 cherry tomatoes, cut in half
1/4 cup edamame beans
Crispy shallots
Ponzu sauce
Wasabi kewpie mayo
Method
Cook rice as instructed, place into bottom of your favourite eco-friendly bowl and top with all other ingredients, then dress with a little ponzu saice and wasbabi mayo. Enjoy!
